Decide whether you will match the food to the wine, or the wine to the food. If you have a meal or courses you are keen to try, or have meals you prefer to present, select appropriate wines to enhance your choices. If you are looking for a more formal party, serve both red and white wines appropriate to the course being served. This makes for the most elegant dining experience. Start with white wine and rose with soup and entrée, leading to a more fully flavored main course with matching red wine. Pair a sweet style of wine with dessert and round out the evening with a fortified wine such as port, with coffee. A divine dining experience!
